Well, There are so many styles for a 'cyser' that using a term like "favorite" is hard to pin down. For a still mead I lean towards Wyeast mead yeast (3184 or 3632), but, for a sparling mead I like Lalvin EC-1118, but my good friend swears by Red Star premier cuvee. He makes a very dry and very high alcohol sparkling cyser.
