I like the way you worded that question. "some of the ways" would be any way that you normally make meads. Just leave out the sulfites. I only use sulfites when I have a known problem (thats been 3 times in 7 years and I make about 30 batches a year). If you are one of those fellows that boils their mead before pitching....When and why would you add sulfites. I think everything is dead. Even when I use fruit, I find that if you pitch a good batch of starter with fruit pulp and honey, then eventually add more honey and water, there is just no problem. So cast away those sulfites and make real mead.
